Creamy Zucchini & Sweet Corn Casserole

4 medium zucchinis, grated (about 4 cups)

2 cups fresh or frozen sweet corn kernels

1 cup ricotta cheese

1 cup heavy cream

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

2 large eggs

2 cloves garlic, minced

1 tsp onion powder

1 tsp dried thyme

1/2 tsp paprika

Salt and pepper, to taste

1 cup breadcrumbs (for topping)

2 tbsp olive oil

Fresh parsley, for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare Zucchini: Grate the zucchinis and place them in a clean dish towel or cheesecloth. Squeeze out excess moisture until they are relatively dry.

      Mix Ingredients: In a large mixing bowl, combine the grated zucchini, sweet corn, ricotta cheese, heavy cream, 1/2 cup of shredded mozzarella, Parmesan cheese, eggs, minced garlic, onion powder, thyme, paprika, salt, and pepper. Mix well until all ingredients are fully incorporated.

        Prepare Baking Dish: Lightly grease a 9x13 inch baking dish with olive oil.

          Transfer Mixture: Pour the zucchini and corn mixture into the prepared baking dish, spreading it evenly.

            Add Breadcrumb Topping: In a small bowl, mix the breadcrumbs with the remaining 1/2 cup of mozzarella cheese and a drizzle of olive oil. Sprinkle this mixture evenly over the top of the casserole.

              Bake It: Bake the casserole in the preheated oven for 25-30 minutes, or until the top is golden and the mixture is bubbling.

                Cool and Serve: Remove the casserole from the oven and let it cool for about 10 minutes. Garnish with freshly chopped parsley, if desired, before serving.
