Creamy Zucchini & Tomato Pasta

12 oz (340g) pasta of your choice (penne or fettuccine work well)

2 medium zucchinis, thinly sliced

1 cup cherry tomatoes, halved

3 cloves garlic, minced

1 medium onion, finely chopped

1 cup heavy cream

1 cup vegetable or chicken broth

1 cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon Italian seasoning (oregano, basil, thyme mix)

Salt and pepper to taste

Fresh basil leaves for garnish

Red pepper flakes (optional for heat)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté Vegetables: In a large skillet over medium heat, add the olive oil. Once hot, add the chopped onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for another minute until fragrant.

      Add Zucchini & Tomatoes: Stir in the sliced zucchini and cherry tomatoes. Season with salt, pepper, and Italian seasoning. Sauté for 5-7 minutes until the zucchini is tender and the tomatoes are slightly blistered.

        Make the Cream Sauce: Pour in the vegetable or chicken broth and bring to a simmer. Let it cook for 2-3 minutes. Then, reduce the heat and stir in the heavy cream, mixing well.

          Incorporate Pasta and Cheese: Add the cooked pasta directly into the skillet. Toss to combine everything evenly. Gradually mix in the grated Parmesan cheese, stirring until melted and creamy. If the sauce is too thick, add some reserved pasta water until desired creaminess is reached.

            Season and Serve: Taste and adjust the seasoning with more salt, pepper, or red pepper flakes if desired. Remove from heat and garnish with fresh basil leaves.

              Enjoy: Serve hot, with extra Parmesan on the side if you wish!
