Ingredients
  

1 pre-made pie crust (9-inch)

2 cups heavy cream

1 cup whole milk

1 cup granulated sugar (divided)

6 large egg yolks

1 tsp pure vanilla extract

1/4 tsp salt

2 tablespoons brown sugar (for topping)

Fresh berries or mint leaves (for garnish, optional)

Instructions
 

Preheat your oven to 325°F (165°C). Place your pie crust in a 9-inch pie pan and set aside.

    In a medium saucepan, combine the heavy cream, whole milk, and 3/4 cup of the granulated sugar. Heat this mixture over medium heat until it’s just about to simmer, stirring occasionally to prevent burning.

      In a separate bowl, whisk together the egg yolks, remaining 1/4 cup granulated sugar, vanilla extract, and salt until the mixture is smooth and slightly pale.

        Gradually pour the hot cream mixture into the egg yolk mixture while whisking continuously to temper the eggs. This prevents the eggs from scrambling.

          Once well combined, strain the mixture through a fine mesh sieve into the prepared pie crust to ensure a silky smooth filling.

            Bake the pie in the preheated oven for about 40-45 minutes, or until the filling is just set (it should still have a slight jiggle in the center).

              Remove the pie from the oven and allow it to cool to room temperature. Once cooled, refrigerate for at least 4 hours to set completely.

                Once the pie is chilled, sprinkle the brown sugar evenly over the top of the pie.

                  Using a kitchen torch, carefully caramelize the brown sugar until it melts and forms a crisp, golden crust. If you don’t have a torch, you can place the pie under the broiler for just a couple of minutes, keeping a close eye to prevent burning.

                    Let the caramelized sugar cool for a couple of minutes until it hardens, then slice the pie. Garnish with fresh berries or mint leaves if desired.
