1 cup water (or plant-based milk)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

1 cup panko breadcrumbs

½ cup buffalo sauce (store-bought or homemade)

1 tablespoon olive oil (optional, for extra crispiness)

Fresh parsley, chopped (for garnish)

Celery sticks and ranch or blue cheese dressing (for serving)

Instructions
 

Prep the Cauliflower: Start by rinsing and cutting the cauliflower into even-sized florets to ensure they cook uniformly. Pat them dry with a paper towel.

    Create the Batter: In a mixing bowl, whisk together the flour, water (or plant-based milk), garlic powder, onion powder, smoked paprika, salt, and black pepper until smooth.

      Prepare the Breading: In a separate bowl, place the panko breadcrumbs. You can season the breadcrumbs with a pinch of salt and pepper for additional flavor if desired.

        Coat the Cauliflower: Dip each cauliflower floret into the batter, allowing any excess to drip off. Then, roll the coated florets in the panko breadcrumbs, pressing gently to ensure they adhere well. Place the breaded cauliflower on a plate or tray.

          Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.

            Air Fry the Bites: Lightly spray the air fryer basket with cooking spray. Arrange the breaded cauliflower bites in a single layer in the basket (you may need to do this in batches). If you want an extra crispy texture, lightly drizzle the panko-coated cauliflower with olive oil before cooking.
