1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

1 cup buttermilk (or non-dairy milk with 1 tablespoon vinegar)

1 cup panko breadcrumbs

½ teaspoon cayenne pepper (optional, for spice)

Olive oil spray

For the Ranch Dip:

½ cup sour cream (or Greek yogurt)

½ cup mayonnaise

1 tablespoon dried dill

1 teaspoon garlic powder

1 teaspoon onion powder

1 tablespoon lemon juice

Salt and pepper to taste

Prep the Cauliflower: Start by washing the cauliflower and cutting it into bite-sized florets. Pat them dry with a paper towel to remove excess moisture. This will help achieve a crispy texture.

    Make the Breading Station: In one bowl, combine the flour, garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne pepper (if using). In a second bowl, pour the buttermilk. In a third bowl, add the panko breadcrumbs.

      Coat the Cauliflower: Dip each cauliflower floret first into the flour mixture, ensuring it's evenly coated. Shake off any excess flour, then dip it into the buttermilk, and finally coat it thoroughly with panko breadcrumbs. Place the coated cauliflower on a plate or a baking sheet.
