Ingredients

1 medium cauliflower head, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

1 cup buttermilk (or plant-based milk for vegan option)

1 cup breadcrumbs (Panko for extra crunch)

2 tablespoons olive oil (optional for extra crispiness)

For the Ranch Dip:

1 cup sour cream (or Greek yogurt)

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon fresh chives, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon salt

½ teaspoon black pepper

1 tablespoon lemon juice

Instructions

Prepare the Cauliflower: Rinse the cauliflower florets under cold water and pat dry. Ensure they are as dry as possible to achieve optimal crispiness.

Make the Batter: In a medium bowl, combine the flour, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well. Slowly add the buttermilk, stirring until you have a smooth batter.

Coat the Cauliflower: Dip each cauliflower floret into the batter, allowing excess to drip off. Then, roll the battered cauliflower in the breadcrumbs until completely coated. Optional: for extra crispiness, drizzle a bit of olive oil over the coated florets.

Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.

Air Fry the Bites: Arrange the cauliflower bites in a single layer in the air fryer basket (cook in batches if necessary). Air fry for 12-15 minutes, shaking the basket halfway through, until they are golden and crispy.

Prepare the Ranch Dip: While the cauliflower is cooking, in a small bowl, whisk together the sour cream, dill, chives, garlic powder, onion powder, salt, black pepper, and lemon juice until smooth and well combined. Adjust seasoning to taste.

Serve: Once the cauliflower bites are ready, remove them from the air fryer and let them cool slightly. Serve immediately with the creamy ranch dip on the side for dipping.
