1 medium head of cauliflower, cut into florets

1 cup all-purpose flour (can substitute with almond flour for gluten-free)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

1 cup buttermilk (or dairy-free milk mixed with a tablespoon of vinegar)

1 cup breadcrumbs (panko for extra crunch)

2 tablespoons olive oil (optional for extra crispiness)

For the Ranch Dip:

1 cup sour cream (or Greek yogurt)

1 tablespoon mayonnaise

1 teaspoon dried dill

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon salt

½ teaspoon black pepper

1 tablespoon lemon juice

Chopped fresh chives or parsley for garnish (optional)

Prepare the Cauliflower: Start by washing and cutting the cauliflower into bite-sized florets. Make sure they are roughly the same size for even cooking.

    Set Up Breading Station: In a bowl, whisk together the flour, garlic powder, onion powder, smoked paprika, salt, and black pepper. In another bowl, pour in the buttermilk. In a third bowl, add the breadcrumbs mixed with a pinch of salt.

      Coat the Cauliflower: Dip each cauliflower floret into the flour mixture, shake off the excess, then into the buttermilk, allowing the excess to drip off, and finally coat in the breadcrumbs. Press the breadcrumbs on to adhere better.

        Preheat Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes. This ensures the cauliflower bites will start cooking immediately for a crispier texture.

          Arrange Bites in Air Fryer: Lightly spray or brush the air fryer basket with olive oil. Place the coated cauliflower bites in a single layer, making sure they are not overcrowded. You may need to do this in batches depending on the size of your air fryer.

              Prepare the Ranch Dip: While the cauliflower is air frying, mix together the sour cream, mayonnaise, dill, garlic powder, onion powder, salt, black pepper, and lemon juice in a small bowl. Adjust the seasoning to taste and garnish with chopped chives or parsley.

                Serve: Once the cauliflower bites are crispy and golden, remove them from the air fryer and serve immediately with the ranch dip on the side.
