1 pound large shrimp, peeled and deveined

1 cup shredded sweetened coconut

1 cup panko breadcrumbs

½ cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

Prepare the Shrimp: Start by patting the shrimp dry with paper towels to remove excess moisture. This step is crucial for achieving crispiness.

    Set Up Dredging Stations: In three separate shallow plates, prepare the dredging stations:

      - In the first plate, add the all-purpose flour, garlic powder, paprika, salt, and black pepper. Mix well.

        - In the second plate, whisk the two large eggs until combined.

          - In the third plate, combine the shredded coconut and panko breadcrumbs evenly.

            Coat the Shrimp: Take each shrimp and first coat it in the flour mixture, shaking off any excess. Next, dip it into the whisked eggs, allowing any excess egg to drip off. Finally, roll the shrimp in the coconut-panko mixture, pressing gently to ensure the coating adheres well. Repeat this process for all the shrimp.

              Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes to ensure an even cook.

                Air Fry the Shrimp: Spray the air fryer basket with cooking spray to prevent sticking. Place the coated shrimp in a single layer in the basket, ensuring they do not overlap. You may need to do this in batches depending on the size of your air fryer. Lightly spray the tops of the shrimp with more cooking spray.

                  Cook: Air fry the shrimp for about 8-10 minutes, flipping them halfway through, or until they are golden brown and crispy. Keep an eye on them, as cooking times may vary based on your air fryer model.
