1 medium eggplant (about 1 pound)

1 cup panko breadcrumbs (preferably whole wheat)

1/2 cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper

Olive oil spray

Optional: fresh herbs (like parsley or basil) for garnish

Instructions
 

Prepare the Eggplant:

    - Wash the eggplant and slice it into 1/4-inch thick rounds. Lay the slices on a clean kitchen towel and sprinkle a little salt over them. Let them sit for about 30 minutes to draw out moisture and bitterness. Rinse and pat dry with paper towels.

      Set Up Breading Station:

        - In a shallow bowl, add the all-purpose flour and season with 1/2 teaspoon salt, 1/4 teaspoon black pepper, garlic powder, onion powder, and smoked paprika. Mix well.

          - In another bowl, beat the eggs until frothy.

            - Place the panko breadcrumbs in a third bowl. For extra flavor, you can mix in a pinch of salt and herbs.

              Coat the Eggplant:

                - Dip each eggplant slice first into the flour mixture, shaking off the excess, then into the beaten eggs, and finally into the panko breadcrumbs, pressing lightly to adhere. Place the coated slices on a parchment-lined tray.

                  Preheat the Air Fryer:

                    - Preheat your air fryer to 375°F (190°C) for about 5 minutes.

                      Air-Fry the Chips:

                        - Spray the air fryer basket lightly with olive oil. Place the eggplant chips in a single layer, making sure not to overcrowd them (you may need to do this in batches).

                          - Spray the tops of the chips with a bit more olive oil for extra crispiness.

                            Cooking Time:
