Ingredients

For the Fish Sticks:

1 pound firm white fish fillets (like cod, haddock, or pollock)

1 cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

1 cup panko breadcrumbs

Cooking spray or olive oil for misting

For the Tartar Sauce:

½ cup mayonnaise

2 tablespoons dill pickles, finely chopped

1 tablespoon capers, drained and chopped

1 tablespoon lemon juice

1 teaspoon Dijon mustard

Salt and pepper to taste

Fresh dill (optional, for garnish)

Instructions

Prepare the Fish:

    - Pat the fish fillets dry with paper towels. Cut them into sticks about 1-2 inches wide and 4 inches long.

      Set Up Breading Stations:

        - In one shallow dish, place the all-purpose flour seasoned with garlic powder, onion powder, paprika, salt, and pepper.

          - In a second shallow dish, beat the eggs.

            - In a third shallow dish, place the panko breadcrumbs.

              Bread the Fish:

                - Dip each fish stick first into the flour mixture, shaking off excess.

                  - Then, dip it into the beaten eggs, allowing any excess to drip off.

                    - Finally, roll the fish stick in panko breadcrumbs, pressing gently to adhere. Place the breaded fish sticks on a plate.

                      Preheat the Air Fryer:

                        - Preheat your air fryer to 400°F (200°C) for about 3-5 minutes.

                          Air Fry the Fish Sticks:

                            - Lightly spray the basket of the air fryer with cooking spray.

                              - Arrange the fish sticks in a single layer in the basket, ensuring they do not touch each other (you may need to work in batches).

                                - Spray the tops of the fish sticks lightly with more cooking spray.

                                  - Cook the fish sticks for 8-10 minutes, flipping halfway through, until they are golden brown and crispy.

                                    Prepare the Tartar Sauce:

                                      - In a small bowl, combine mayonnaise, chopped dill pickles, capers, lemon juice, Dijon mustard, salt, and pepper. Mix well until all ingredients are incorporated. Adjust seasoning to taste, and garnish with fresh dill if desired.

                                        Serve:

                                          - Serve the crispy fish sticks hot with tartar sauce on the side for dipping. Enjoy your delicious meal!
