4 medium sweet potatoes

1 tablespoon olive oil

Salt, to taste

1 teaspoon smoked paprika

½ teaspoon garlic powder

1 cup shredded cheese (cheddar or a cheese blend)

½ cup cooked and crumbled bacon (or bacon bits)

¼ cup green onions, sliced

¼ cup sour cream or Greek yogurt

Fresh cilantro for garnish (optional)

Prep the Sweet Potatoes: Preheat your air fryer to 400°F (200°C). Wash and scrub the sweet potatoes thoroughly. Prick each sweet potato several times with a fork to allow steam to escape.

    Cook the Sweet Potatoes: Lightly coat the sweet potatoes with olive oil and sprinkle with salt. Place them in the air fryer basket. Cook for about 30-35 minutes, or until they are tender when pierced with a fork. Flip them halfway through cooking for even results.

      Halve and Scoop: Once cooked, carefully remove the sweet potatoes from the air fryer and let them cool for a few minutes. Slice each sweet potato in half lengthwise and scoop out most of the flesh, leaving about ¼ inch of sweet potato on the skin.

        Season the Skins: In a bowl, mix the reserved sweet potato flesh with smoked paprika, garlic powder, and salt. Spoon this mixture back into the skins, pressing it down a bit for extra flavor.

          Add Cheese and Bacon: Sprinkle the shredded cheese generously over the filled sweet potato skins, and top them with crumbled bacon.

            Air Fry Again: Place the loaded sweet potato skins back into the air fryer. Air fry at 400°F (200°C) for an additional 5-7 minutes, or until the cheese is melted and bubbly, and the skins are crispy.
