4 medium russet potatoes, scrubbed and cut into wedges

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon dried thyme

½ teaspoon salt

½ teaspoon black pepper

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional, for serving)

Prepare the Potatoes: After scrubbing the potatoes, cut them into wedges (about 8 wedges per potato). Soak the wedges in cold water for at least 30 minutes to remove excess starch (optional but recommended for extra crispiness).

    Season the Wedges: Drain the soaked potato wedges and pat them dry with a kitchen towel. In a large bowl, combine the olive oil, garlic powder, onion powder, smoked paprika, oregano, thyme, salt, and black pepper. Toss the wedges in the mixture until evenly coated.
