Ingredients

For the Sweet Potato Fries:

2 large sweet potatoes

2 tablespoons olive oil

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon cayenne pepper (optional for heat)

Salt and black pepper, to taste

For the Dip:

1/2 cup plain Greek yogurt

1 tablespoon honey or maple syrup

1 tablespoon Dijon mustard

1 teaspoon apple cider vinegar

Salt and pepper, to taste

Chopped fresh chives or parsley for garnish (optional)

Instructions

Prepare the Sweet Potatoes:

    - Peel the sweet potatoes and cut them into thin, even strips. Aim for about 1/4 inch thick for maximum crispiness.

      Season the Fries:

        - In a large bowl, toss the sweet potato strips with olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and black pepper until they are evenly coated.

          Preheat the Air Fryer:

            - Preheat your air fryer to 400°F (200°C) for about 5 minutes to ensure the fries cook evenly and become crispy.

              Cook the Fries:

                - Place the sweet potato fries in a single layer in the air fryer basket. Depending on the size of your air fryer, you may need to do this in batches. Avoid overcrowding for the best results.

                  - Air fry for 15-20 minutes, shaking the basket halfway through cooking to ensure even crispiness. Cook until golden and crispy on the outside, and tender on the inside.

                    Make the Dip:

                      - In a small bowl, combine the Greek yogurt, honey or maple syrup, Dijon mustard, apple cider vinegar, salt, and pepper. Mix until smooth. Adjust seasoning to taste. Add chopped chives or parsley for an extra touch if desired.

                        Serve:

                          - Once the sweet potato fries are done, remove them from the air fryer and serve immediately with the dip on the side.
