Crispy Air Fryer Taco-Stuffed Mini Peppers

12 mini sweet peppers

1 lb ground beef (or turkey)

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon olive oil

1 packet (1 oz) taco seasoning

1 cup shredded cheese (cheddar or Mexican blend)

1/2 cup black beans, rinsed and drained

1/4 cup corn (frozen or canned)

1 tablespoon fresh cilantro, chopped (optional)

Salt and pepper, to taste

Sour cream and pico de gallo for serving (optional)

Instructions
 

Prep the Mini Peppers: Cut the tops off the mini sweet peppers and gently remove the seeds. Set aside.

    Cook the Meat Mixture: In a medium skillet, heat olive oil over medium heat. Add chopped onions and minced garlic, cooking until they are softened (about 2-3 minutes). Next, add the ground beef (or turkey) and cook until browned, crumbling it with a spatula as it cooks. Drain excess fat if necessary.

      Add Seasoning: Sprinkle in the taco seasoning and mix well. Stir in black beans and corn, cooking for another 2 minutes until heated through. Taste and add salt and pepper if needed. Remove from heat and stir in half of the shredded cheese and cilantro.

        Stuff the Peppers: Preheat your air fryer to 375°F (190°C). Carefully stuff each mini pepper with the taco filling mixture, packing it down slightly.

          Add Cheese on Top: Place the stuffed peppers in the air fryer basket. Top each pepper with the remaining shredded cheese.

            Air Fry Them: Cook in the air fryer for 10-12 minutes, or until the peppers are tender and the cheese is melted and bubbly with a crisp top.

              Serve: Carefully remove the peppers from the air fryer. Serve them hot with sour cream and pico de gallo if desired, and garnish with additional cilantro if you like.
