2 medium zucchinis

1 cup seasoned breadcrumbs (or panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 large egg

1 tablespoon Dijon mustard

Cooking spray (for air frying)

Prep the Zucchinis: Wash and dry the zucchinis. Cut them into thin, fry-like strips (approximately 1/4 inch thick). Place them on a clean dish towel or paper towel and sprinkle a little salt over them. Let sit for about 10 minutes to draw out excess moisture.

    Make the Coating: In a shallow bowl, combine the seasoned breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well to combine all the seasonings evenly.

      Prepare the Egg Wash: In another bowl, whisk together the egg and Dijon mustard until smooth. This will act as the glue to help the breadcrumbs stick to the zucchini.
