Ingredients

1 pound of cocktail sausages (smokies)

1 pound of thick-cut bacon, sliced into thirds

1 cup of brown sugar

1 teaspoon of smoked paprika

1 teaspoon of garlic powder

1/2 teaspoon of black pepper

Wooden toothpicks (soaked in water for 30 minutes)

Instructions

Prep the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with aluminum foil for easy cleanup. Place a wire rack on top of the baking sheet to allow grease to drip off the bacon as it cooks.

Wrap the Smokies: Take a piece of bacon and wrap it around a cocktail sausage, securing it with a toothpick. Repeat this process until all sausages are wrapped.

Season the Bacon: In a mixing bowl, combine the brown sugar, smoked paprika, garlic powder, and black pepper. Stir until well mixed.

Coat the Wrapped Smokies: Roll each bacon-wrapped smokie in the brown sugar mixture, ensuring they are coated evenly. Place them seam-side down on the wire rack.

Bake: Place the baking sheet in the preheated oven and bake for about 20-25 minutes, or until the bacon is crispy and caramelized to your liking. For extra crispiness, you can broil them for an additional 2-3 minutes, keeping a close eye to avoid burning.

Serve: Remove from the oven and let cool for a few minutes before serving. Enjoy your crispy bacon-wrapped smokies warm, and drizzle any remaining pan drippings over the top for added flavor.
