2 cups all-purpose flour

1 cup apple cider

3/4 cup brown sugar, packed

1/2 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/2 teaspoon salt

2 large eggs

1/4 cup unsalted butter, melted and slightly cooled

1 teaspoon vanilla extract

1/2 cup powdered sugar (for dusting)

Additional cinnamon sugar (1/4 cup granulated sugar mixed with 1 teaspoon cinnamon, optional for coating)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Lightly grease a donut pan with non-stick cooking spray or butter.

    Prepare the Cider Reduction: In a small saucepan, bring the apple cider to a boil over medium heat. Reduce the heat and let it simmer until it reduces to about 1/2 cup, approximately 15-20 minutes. Set aside to cool slightly.

      Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, brown sugar, granulated sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.

        Combine Wet Ingredients: In another bowl, whisk together the eggs, melted butter, vanilla extract, and the apple cider reduction until smooth.

          Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are fine.

            Fill the Donut Pan: Spoon the batter into the prepared donut pan, filling each cavity about 2/3 full. You can use a piping bag or a ziplock bag with the corner snipped off for easy filling.
