1 large butternut squash

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon cayenne pepper (optional)

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons cornstarch (for extra crispiness)

Fresh parsley (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

    Prepare the Butternut Squash: Carefully peel the butternut squash using a sharp vegetable peeler. Cut off both ends, then slice it in half lengthwise and scoop out the seeds with a spoon.

      Cut into Fries: Cut the squash into even, fry-sized sticks, about 1/4 inch thick. Try to keep the pieces uniform for even cooking.

        Season the Fries: In a large mixing bowl, combine the olive oil, garlic powder, paprika, cayenne pepper (if using), salt, and black pepper. Toss the butternut squash fries in the bowl until evenly coated with the seasoning mixture.

          Add Cornstarch: Sprinkle the cornstarch over the seasoned fries. Toss again until all of the fries are lightly coated. This step will help achieve extra crispiness.
