2 medium-sized zucchinis

1 cup breadcrumbs (preferably panko for extra crunch)

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

½ teaspoon salt

¼ teaspoon black pepper

2 large eggs

¼ cup all-purpose flour

Prepare the Zucchini: Preheat your oven to 425°F (220°C). Wash the zucchinis and trim the ends. Cut each zucchini in half widthwise and then slice each half into quarters lengthwise, creating fry-shaped pieces.

    Set Up Dredging Stations: In a shallow bowl, add the flour. In another bowl, whisk the eggs until well combined. In a third bowl, mix the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and black pepper.

      Dredge the Zucchini: Take one zucchini fry and dip it into the flour, making sure it's well-coated. Then, dip it into the beaten eggs, allowing any excess to drip off. Finally, roll it in the breadcrumb mixture, pressing lightly to ensure the coating sticks. Place each coated fry on a baking sheet lined with parchment paper. Repeat for all zucchini pieces.
