Ingredients

For the Salmon:

4 salmon fillets, skin-on (about 6 ounces each)

1 tablespoon olive oil

1 teaspoon sea salt

1 teaspoon black pepper

1 teaspoon smoked paprika

½ teaspoon garlic powder

½ teaspoon onion powder

¼ teaspoon cayenne pepper (optional for heat)

Zest of 1 lemon

For the Lemon Herb Sauce:

¼ cup Greek yogurt

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

1 tablespoon honey

Juice of 1 lemon

2 tablespoons fresh dill, finely chopped

1 tablespoon fresh parsley, finely chopped

1 clove garlic, minced

Salt and pepper to taste

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the Salmon:

      - Pat the salmon fillets dry with paper towels. This will help achieve that crispy skin.

        - In a small bowl, mix together the olive oil, sea salt, black pepper, smoked paprika, garlic powder, onion powder, cayenne pepper, and lemon zest.

          - Rub this spice mixture evenly over the salmon fillets, ensuring the seasoning goes under the skin, too.

            Bake the Salmon:

              - Place the seasoned salmon fillets skin-side down on the prepared baking sheet.

                - Bake in the preheated oven for about 12-15 minutes, or until the salmon is opaque and flakes easily with a fork. The skin should be crispy and slightly golden.

                  Make the Lemon Herb Sauce:

                    - While the salmon is baking, whisk together the Greek yogurt, mayonnaise, Dijon mustard, honey, lemon juice, chopped dill, parsley, minced garlic, and salt and pepper in a bowl until smooth.

                      - Taste and adjust seasoning as needed—feel free to add more lemon juice or salt to enhance the flavor.

                        Serve:

                          - Once the salmon is done, carefully transfer it to a serving platter.

                            - Drizzle the Lemon Herb Sauce generously over the salmon or serve it on the side for dipping.

                              - Garnish with lemon wedges and additional fresh herbs if desired.

Enjoy: Serve warm alongside a fresh salad, roasted vegetables, or your favorite grain for a complete meal!
