Ingredients

2 large sweet potatoes

3 tablespoons olive oil

1 tablespoon Cajun seasoning

½ teaspoon garlic powder

½ teaspoon smoked paprika

½ teaspoon onion powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: Dipping sauce (aioli or ranch)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup and crispiness.

Prepare the Sweet Potatoes: Wash and peel the sweet potatoes. Cut each sweet potato into wedges about 1 inch thick, ensuring they are all roughly the same size for even cooking.

Season the Wedges: In a large bowl, mix the olive oil, Cajun seasoning, garlic powder, smoked paprika, onion powder, salt, and pepper. Add the sweet potato wedges to the bowl and toss them until they are well coated in the spice mixture.

Arrange on Baking Sheet: Spread the seasoned wedges in a single layer on the prepared baking sheet. Make sure there is space between each wedge to allow for even crisping.

Bake the Wedges: Bake in the preheated oven for 25-30 minutes, flipping them halfway through to ensure they are evenly crispy and golden. The wedges are done when they are tender on the inside and crispy on the outside.

Garnish and Serve: Once cooked, remove the wedges from the oven and let them cool for a few minutes. Garnish with freshly chopped parsley before serving. Enjoy with your choice of dipping sauce!
