1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup buttermilk

1 tablespoon ranch seasoning mix

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

½ teaspoon black pepper

1 cup shredded sharp cheddar cheese

1 cup panko breadcrumbs

Cooking spray or oil for frying

Fresh parsley, chopped (for garnish)

Marinate the Chicken: In a bowl, combine the buttermilk and ranch seasoning. Add the chicken pieces to the mixture, ensuring they are well coated. Cover and refrigerate for at least 30 minutes to let the flavors meld.

    Prepare the Breading Station: In one shallow dish, mix the flour, garlic powder, onion powder, paprika, and black pepper. In a second dish, combine the panko breadcrumbs and shredded cheddar cheese.

      Coat the Chicken Bites: Remove the marinated chicken from the fridge. Dredge each piece in the seasoned flour, shaking off the excess. Then, dip it back into the buttermilk briefly before transferring to the panko-cheddar mix. Press gently to ensure the breadcrumbs adhere well.

        Preheat the Cooking Surface: If frying, heat about ½ inch of oil in a large skillet over medium-high heat. If baking, preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
