1 lb boneless, skinless chicken thighs

1 cup buttermilk

1 tablespoon ranch seasoning mix

1 cup all-purpose flour

1 cup Panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

1 cup shredded sharp cheddar cheese

8 slider buns

¼ cup mayonnaise

2 tablespoons chopped fresh chives (for garnish)

Lettuce leaves (optional)

Slices of tomato (optional)

Instructions
 

Marinate Chicken: In a large bowl, combine the buttermilk and ranch seasoning mix. Add the chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour (or up to overnight for more flavor).

    Prepare Breading: In a shallow dish, combine the flour, Panko breadcrumbs, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well.

      Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

        Bread the Chicken: Remove the chicken from the marinade, allowing excess buttermilk to drip off. Dredge each thigh in the flour mixture, pressing gently to ensure an even coating. Repeat this process until all chicken pieces are breaded.

          Bake Chicken: Arrange the breaded chicken on the prepared baking sheet. Bake for 20-25 minutes or until the chicken is golden-brown and cooked through (internal temperature should reach 165°F or 74°C). In the last 5 minutes, sprinkle the shredded cheddar cheese over the chicken to melt.

            Assemble Sliders: While the chicken is baking, mix the mayonnaise with a tablespoon of ranch seasoning in a small bowl (optional). Slice the slider buns in half. Spread the ranch mayo on the bottom halves of the buns.
