2 medium zucchinis, grated

1 teaspoon salt

1 cup all-purpose flour

1/2 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

2 large eggs

1/4 cup chopped fresh parsley (or cilantro)

2 green onions, finely chopped

1 teaspoon garlic powder

1/2 teaspoon black pepper

Prepare the Zucchini:

    Start by grating the zucchini using a box grater. Place the grated zucchini in a clean kitchen towel, gather the ends, and twist to squeeze out excess moisture. This step is crucial for achieving crispy fritters.

      Mix Ingredients:

        In a large mixing bowl, combine the squeezed zucchini, salt, flour, Parmesan cheese, mozzarella cheese, eggs, parsley, green onions, garlic powder, and black pepper. Stir until all ingredients are well combined.

          Heat the Oil:

            In a large skillet, pour enough olive oil to cover the bottom of the pan and heat over medium heat. The oil should shimmer but not smoke.
