4 large bone-in, skin-on chicken thighs

1/4 cup fresh cilantro, chopped

Zest of 1 lime

Juice of 2 limes

4 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon sea salt

1/2 teaspoon black pepper

1 tablespoon olive oil

Optional: lime wedges and extra cilantro for serving

Marinate the Chicken: In a mixing bowl, whisk together the chopped cilantro, lime zest, lime juice, minced garlic, ground cumin, smoked paprika, salt, and pepper. Add the chicken thighs and ensure they are fully coated with the marinade. Cover the bowl with plastic wrap or transfer to a resealable bag, and marinate in the refrigerator for at least 1 hour, or preferably overnight for deeper flavor.

    Preheat the Oven: Preheat your oven to 425°F (220°C).

      Prepare for Baking: Remove the chicken thighs from the marinade and shake off excess. Reserve the marinade for basting. Pat the chicken thighs dry with paper towels, which will help achieve crispy skin. Place the thighs skin-side up on a baking sheet lined with parchment paper or a lightly greased baking dish.
