Ingredients

2 medium zucchinis (about 1 pound), grated

1 teaspoon sea salt

1/2 cup feta cheese, crumbled

1 large egg

1/4 cup all-purpose flour (can substitute gluten-free flour)

1/4 cup cornmeal

2 green onions, finely chopped

2 cloves garlic, minced

1/4 teaspoon black pepper

1 teaspoon dried oregano

1/2 teaspoon paprika

Olive oil, for frying

Fresh herbs (like dill or parsley) for garnish, optional

Lemon wedges, for serving

Instructions

Prep the Zucchini: Grate the zucchinis using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or cheesecloth and sprinkle with sea salt. Let them sit for about 10-15 minutes to draw out excess moisture. Afterward, squeeze out as much liquid as possible.

Mix Ingredients: In a large mixing bowl, combine the drained grated zucchini, crumbled feta cheese, egg, all-purpose flour, cornmeal, green onions, minced garlic, black pepper, dried oregano, and paprika. Stir until everything is well mixed and a thick batter forms.

Heat the Oil: In a large skillet, heat about 1/4-inch of olive oil over medium heat. To test if the oil is hot enough, drop a small amount of the batter into the oil; if it sizzles, you’re ready to go.

Form and Cook Fritters: Using a tablespoon, scoop out portions of the zucchini mixture and gently flatten them into fritter shapes. Carefully place them in the hot oil. Do not overcrowd the pan; fry in batches if necessary.

Fry Until Golden: Cook for 3-4 minutes per side or until they are golden brown and crispy. Adjust the heat as needed to ensure the fritters do not burn.

Drain Excess Oil: Once cooked, transfer the fritters to a plate lined with paper towels to absorb excess oil.

Serve: Serve the fritters hot, garnished with fresh herbs if desired, and with lemon wedges on the side for a refreshing squeeze.
