4 large russet potatoes

4 tablespoons olive oil

4 cloves garlic, minced

2 teaspoons dried oregano

2 teaspoons dried thyme

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

¼ cup grated Parmesan cheese (optional)

Fresh parsley, chopped (for garnish)

Preheat the Oven: Start by preheating your oven to 425°F (220°C). This will ensure your wedges get nice and crispy.

    Prepare the Potatoes: Wash and peel the russet potatoes (if preferred; leaving the skin on adds extra texture). Cut each potato into wedges by first halving the potato lengthwise and then cutting each half into 3 or 4 wedges, depending on the size.

      Mix the Coating: In a large mixing bowl, combine the olive oil, minced garlic, oregano, thyme, smoked paprika, salt, and black pepper. Whisk these ingredients together until well mixed.

        Coat the Potato Wedges: Add the potato wedges to the bowl with the oil and herb mixture. Toss well to ensure that each wedge is nicely coated in the seasoning.

          Arrange on Baking Sheet: Line a large baking sheet with parchment paper for easier cleanup. Spread the potato wedges out in a single layer, making sure they aren’t overcrowded to ensure they crisp up nicely.
