2 medium zucchinis

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/4 teaspoon black pepper

1/2 teaspoon salt

2 large eggs

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Marinara sauce (for dipping, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

    Prepare the Zucchini: Wash and dry the zucchinis. Cut them into fries by slicing each zucchini in half lengthwise, and then cutting each half into sticks about 1/4 inch thick.

      Set Up Dipping Stations: In a shallow bowl, beat the two eggs and add the olive oil, mixing well. In another bowl, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, black pepper, and salt.

        Coat the Zucchini: Dip each zucchini fry into the egg mixture, allowing any excess to drip off, then roll it in the breadcrumb mixture until fully coated. Place the coated fries on the prepared baking sheet. Repeat with all the zucchini pieces.

          Bake: Arrange the coated zucchini fries in a single layer on the baking sheet. Bake in the preheated oven for about 20-25 minutes, turning halfway through, until they are golden brown and crispy.

            Serve: Remove the zucchini fries from the oven and let them cool for a few minutes. Sprinkle with freshly chopped parsley. Serve hot, with marinara sauce on the side for dipping if desired.
