2 medium zucchinis

½ cup whole wheat breadcrumbs

¼ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon black pepper

1 large egg

1 tablespoon olive oil

    Prepare the Zucchini: Wash and dry the zucchinis. Cut them into sticks, approximately ¼ inch thick, to resemble fries. Place them in a colander and lightly sprinkle with salt. Let them sit for about 15 minutes to draw out excess moisture. This step is key to achieving crispiness!

      Make the Coating: In a medium bowl, combine the whole wheat breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, black pepper, and salt. Mix well until the ingredients are evenly distributed.
