1 large cauliflower head

1 cup breadcrumbs (panko for extra crunch)

1 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

2 large eggs

¼ cup whole milk

1 teaspoon Dijon mustard

Olive oil (for drizzling)

Fresh parsley (for garnish)

Instructions
 

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and set aside.

    Remove the leaves from the cauliflower and trim the stem so it sits flat. Carefully slice the cauliflower into 1-inch thick steaks. You should get about 4-6 steaks.

      In a shallow bowl, mix together the breadcrumbs, grated Parmesan, garlic powder, paprika, salt, and black pepper.

        In another shallow bowl, whisk together the eggs, milk, and Dijon mustard until well combined.

          Dip each cauliflower steak into the egg mixture, allowing excess to drip off, and then coat with the breadcrumb mixture, pressing gently to adhere.

            Place the coated steaks on the prepared baking sheet. Drizzle with olive oil for added crispness.

              Bake in the preheated oven for about 20-25 minutes, flipping halfway through, until the cauliflower is golden brown and crispy on the outside.

                Remove from the oven and let cool slightly. Garnish with chopped fresh parsley before serving.
