Crispy Halloumi Taco Lettuce Wraps

250g Halloumi cheese, sliced into thin strips

1 cup all-purpose flour

1 tsp garlic powder

1 tsp smoked paprika

1/2 tsp cayenne pepper (optional)

Salt and pepper, to taste

Olive oil, for frying

8 large romaine or butter lettuce leaves

1 ripe avocado, diced

1 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

1/4 cup red onion, finely diced

Juice of 1 lime

1/2 tsp ground cumin

1/4 tsp black pepper

Instructions
 

Prepare the Halloumi:

    - In a shallow dish, combine flour, garlic powder, smoked paprika, cayenne pepper, salt, and pepper. Mix well.

      - Dredge each Halloumi slice in the flour mixture, coating evenly. Shake off any excess.

        Cook the Halloumi:

          - Heat a non-stick skillet over medium heat and add olive oil to coat the bottom. Once hot, carefully place the coated Halloumi slices in the skillet.

            - Fry for about 2-3 minutes on each side, or until golden brown and crispy. Remove from the skillet and place on paper towels to drain any excess oil.

              Make the Avocado Salsa:

                - In a medium bowl, combine diced avocado, cherry tomatoes, cilantro, red onion, lime juice, ground cumin, and black pepper. Toss gently to combine. Set aside.

                  Assemble the Lettuce Wraps:

                    - Take a lettuce leaf and spoon a few pieces of crispy Halloumi into the center.
