Ingredients

1 pound boneless, skinless chicken thighs (cut into bite-sized pieces)

1 cup all-purpose flour

1 cup panko breadcrumbs

2 large eggs (beaten)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup honey

4 cloves garlic (minced)

1 tablespoon soy sauce

1 tablespoon apple cider vinegar

1 tablespoon sesame oil

1 tablespoon fresh ginger (grated)

Optional: sliced green onions and sesame seeds for garnish

Instructions

Prepare the Chicken Bites: In a large bowl, combine the garlic powder, onion powder, smoked paprika, salt, and black pepper. Add the chicken pieces and toss until well-coated in the seasoning mix.

Set Up Breading Station: In three separate shallow bowls, prepare the flour, beaten eggs, and panko breadcrumbs. Season the panko with a pinch of salt and pepper for extra flavor.

Bread the Chicken: Dredge each piece of seasoned chicken in flour, shaking off the excess. Dip it into the beaten eggs, then coat thoroughly with panko breadcrumbs, pressing gently to adhere. Place the breaded chicken bites on a plate or baking sheet.

Fry the Chicken: In a large skillet, heat vegetable oil over medium-high heat (about 1/4 inch deep). Once hot (around 350°F), carefully add the chicken bites in batches (do not overcrowd). Fry for about 3-4 minutes on each side, or until golden and crispy. Remove and place on a paper towel-lined plate to drain excess oil.

Prepare the Honey Garlic Sauce: In a saucepan over medium heat, combine the honey, minced garlic, soy sauce, apple cider vinegar, sesame oil, and grated ginger. Stir occasionally until the sauce comes to a gentle simmer. Cook for about 3-5 minutes until slightly thickened.

Combine and Serve: In a large mixing bowl, toss the crispy chicken bites in the honey garlic sauce until well-coated.

Garnish and Enjoy: Serve immediately topped with sliced green onions and sesame seeds if desired. These bites make a great appetizer or a main dish served with rice or a fresh salad.
