Crispy Honey Garlic Tofu Nuggets

1 block (14 oz) extra-firm tofu

1 cup cornstarch

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper to taste

½ cup honey

¼ cup soy sauce

2 tablespoons rice vinegar

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon sesame oil

Cooking oil (for frying)

Chopped green onions and sesame seeds for garnish

Instructions
 

Press the Tofu: Begin by pressing the tofu. Wrap the tofu block in a clean kitchen towel and place a heavy object (like a skillet or a few cans) on top. Let it sit for at least 30 minutes to remove excess moisture. This will help achieve crispiness later.

    Prepare the Marinade: In a small saucepan, combine honey, soy sauce, rice vinegar, minced garlic, grated ginger, and sesame oil. Heat over low flame, stirring occasionally, until the honey dissolves, and the mixture is well combined. Set aside about ¼ cup of the marinade for later.

      Cut the Tofu: Once the tofu is pressed, cut it into bite-sized cubes, about 1-2 inches in size. Transfer the tofu cubes into a mixing bowl and pour over the marinade reserved for soaking. Toss gently to coat the tofu evenly. Let it marinate for at least 15 minutes.

        Prepare the Breading Station: In one bowl, place the cornstarch, and in another bowl, mix the panko breadcrumbs with garlic powder, onion powder, smoked paprika, salt, and pepper.

          Bread the Tofu Nuggets: Remove the tofu from the marinade and let excess liquid drip off. Dredge each cube in cornstarch, ensuring it's fully coated. Next, dip the tofu into the panko mixture, pressing gently to adhere the breadcrumbs.

            Fry the Nuggets: Heat about ½ inch of cooking oil in a large skillet over medium-high heat. Once the oil is hot (a drop of water should sizzle), carefully add the breaded tofu in batches, making sure not to overcrowd the pan. Fry until golden brown and crispy, about 3-4 minutes per side. Use a slotted spoon to transfer the nuggets to a paper towel-lined plate to absorb excess oil.

              Glaze with Remaining Sauce: In a clean saucepan, bring the reserved marinade to a gentle simmer over low heat for about 5 minutes until slightly thickened. Toss the crispy tofu nuggets in the glaze until evenly coated.
