Ingredients

1 lb chicken tenders

1 cup buttermilk

1 tablespoon Dijon mustard

1 tablespoon honey

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

1 cup all-purpose flour

1 cup panko breadcrumbs

½ cup grated Parmesan cheese

Vegetable oil, for frying

Instructions

Marinate the Chicken:

    - In a large bowl, combine buttermilk, Dijon mustard, honey, garlic powder, paprika, salt, and black pepper. Mix well until smooth.

      - Add the chicken tenders to the marinade, ensuring they are completely coated. Cover and refrigerate for at least 1 hour, or overnight for the best flavor.

        Prepare the Breading:

          - In a shallow dish, whisk together flour, salt, and pepper.

            - In another shallow dish, combine panko breadcrumbs and grated Parmesan cheese. Toss to mix evenly.

              Bread the Chicken:

                - Preheat your oven to 200°F (90°C) to keep the tenders warm after frying.

                  - Remove the chicken from the marinade, letting the excess drip off.

                    - Dredge each tender in the flour mixture, shaking off any excess. Then, dip it back into the buttermilk marinade before coating it thoroughly in the panko-Parmesan mixture.

                      - Press the breadcrumbs onto the chicken to ensure a good coating.

                        Fry the Chicken:

                          - In a large skillet, heat vegetable oil over medium heat until it shimmers (about 350°F or 175°C).

                            - Carefully add chicken tenders to the skillet, cooking in batches if necessary to avoid overcrowding. Fry for about 4-5 minutes on each side or until golden brown and cooked through (internal temperature should reach 165°F/75°C).

                              Drain and Keep Warm:

                                - Transfer the cooked tenders to a paper towel-lined plate for draining excess oil. Place them in the preheated oven to keep warm while you finish frying the rest.

                                  Serve:

                                    - Serve the crispy honey mustard chicken tenders with your favorite dipping sauce (such as more honey mustard, ranch, or barbecue sauce) and enjoy!
