Ingredients

1 cup fresh jalapeños, seeded and diced

1 cup sharp cheddar cheese, shredded

½ cup cream cheese, softened

½ cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 large egg

1 cup breadcrumbs (preferably panko for extra crunch)

Salt and pepper to taste

Oil for frying

Instructions

Prepare the Filling:

    - In a mixing bowl, combine diced jalapeños, shredded cheddar cheese, cream cheese, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well until all ingredients are evenly combined.

      Create the Bites:

        - Using your hands, take a tablespoon of the jalapeño-cheese mixture and shape it into small balls, about 1 to 1.5 inches in diameter. Place them on a baking sheet lined with parchment paper.

          Setup Breading Station:

            - In a shallow bowl, place the flour. In another bowl, whisk the egg. In a third bowl, place the breadcrumbs. You will need these for the coating process.

              Bread the Bites:

                - Dip each ball first into the flour, shaking off any excess, then into the egg, and finally into the breadcrumbs, ensuring they are completely coated. Repeat until all balls are breaded.

                  Heat the Oil:

                    - In a deep skillet or frying pan, heat about 2 inches of oil over medium-high heat until it reaches 350°F (175°C). Carefully test the oil with a small piece of bread or a small bite; if it begins to bubble and fry, it's ready.

                      Fry the Bites:

                        - Working in batches, gently place the breaded bites into the hot oil. Fry for about 3-4 minutes, turning occasionally, until they are golden brown and crispy. Remove with a slotted spoon and drain on paper towels to remove excess oil.

                          Serve:

                            - Serve the crispy jalapeño cheddar bites warm, with your choice of dipping sauces like ranch, sour cream, or a spicy aioli.
