Ingredients

1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

2 large eggs, beaten

1 cup breadcrumbs (Panko works best for extra crunch)

1 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional, for heat)

Cooking spray or olive oil spray

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

Prepare the Cauliflower: Wash and cut the cauliflower into bite-sized florets. Make sure they are relatively uniform in size for even cooking.

Set Up Breading Station: In three separate bowls, set up your breading station:

        - In the first bowl, add the flour and season with salt and pepper.

          - In the second bowl, beat the eggs until well combined.

            - In the third bowl, combine the breadcrumbs, grated Parmesan, garlic powder, onion powder, smoked paprika, and cayenne pepper (if using). Mix thoroughly.

              Bread the Cauliflower:

                - First, coat each cauliflower floret in the flour mixture, shaking off the excess.

                  - Next, dip the floret into the beaten eggs, allowing the excess to drip off.

                    - Finally, coat the floret in the breadcrumb-Parmesan mixture, pressing gently to ensure the coating adheres well. Place each coated floret on the prepared baking sheet.

                      Bake the Cauliflower:

                        - Once all the florets are breaded and arranged on the baking sheet, lightly spray them with cooking spray or olive oil spray. This will help them achieve a golden-brown, crispy exterior.

                          - Bake in the preheated oven for 20-25 minutes, flipping them halfway through the cooking process, until they are deeply golden and crispy.

Serve: Once done, remove from the oven and let them cool for a couple of minutes. Serve warm as a snack or appetizer with your favorite dipping sauce, such as marinara, ranch, or a spicy aioli.
