4 medium-sized artichokes

1 cup breadcrumbs (preferably Panko for extra crunch)

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper, to taste

1/2 teaspoon red pepper flakes (optional for a kick)

Juice of 1 lemon

3 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Prepare the Artichokes: Start by trimming the tops of the artichokes. Using kitchen scissors, snip off the pointed tips of the leaves. Cut the stems to about an inch long. Using a knife, slice each artichoke in half lengthwise and scoop out the fuzzy choke in the center with a spoon.
