4 medium zucchini, sliced into 1/4 inch rounds

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

1/4 cup all-purpose flour

Olive oil spray (or 2 tablespoons olive oil for drizzling)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easier cleanup.

    Prepare the Zucchini: Rinse and slice the zucchini into 1/4-inch thick rounds. Pat them dry with paper towels to remove excess moisture, which helps achieve crispiness.

      Make the Breading Mixture: In a shallow bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and black pepper. Mix well to ensure even distribution of the seasonings.

        Set Up the Breading Station: In another shallow bowl, beat the eggs. Place the flour in a third shallow bowl.

          Coat the Zucchini: Dip each zucchini slice first into the flour, shaking off any excess. Then, dip it into the beaten eggs, allowing any excess to drip off. Finally, coat it in the breadcrumb mixture, pressing gently to adhere the crumbs.

            Arrange on Baking Sheet: Place the breaded zucchini slices on the prepared baking sheet in a single layer. Make sure they are not touching to allow even cooking. If using, lightly spray the tops with olive oil or drizzle with olive oil for additional crispiness.

              Bake: Bake in the preheated oven for 20-25 minutes, turning halfway through, until the zucchini is golden brown and crispy.

                Serve: Once cooked, remove from the oven and allow to cool for a few minutes. Garnish with freshly chopped parsley before serving. Enjoy with marinara sauce or a yogurt dip on the side.
