2 medium zucchinis

1 cup panko breadcrumbs

½ cup grated Parmesan cheese

1 teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon dried Italian herbs (oregano, basil, thyme)

2 large eggs

¼ cup all-purpose flour

Salt and pepper to taste

Olive oil spray or cooking spray for baking

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Zucchini: Wash and dry the zucchinis. Cut each zucchini in half lengthwise, then cut each half into sticks that are about ½ inch wide. Aim for uniform sizes to ensure even cooking.

      Set Up the Breading Station: In one bowl, place the all-purpose flour and season it with salt and pepper. In a second bowl, whisk the eggs until light and frothy. In a third bowl, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, and dried Italian herbs. Mix well to combine.

        Coat the Zucchini: Take each zucchini stick and first dip it into the flour, shaking off any excess. Then, dip it into the beaten eggs, followed by the panko-Parmesan mixture.
