4 medium-sized Yukon Gold potatoes

1 cup grated Parmesan cheese

1/2 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

1/4 cup fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easier cleanup and to prevent sticking.

    Prepare the Potatoes: Wash and scrub the Yukon Gold potatoes thoroughly. Slice them into 1/4-inch thick rounds, ensuring they are even for uniform cooking.

      Set Up Breading Station: In one bowl, combine the flour, garlic powder, onion powder, paprika, salt, and black pepper. In a separate bowl, beat the eggs. In a third bowl, place the grated Parmesan cheese.

        Coat the Potato Rounds: Dip each potato round first into the flour mixture, coating it evenly. Shake off any excess flour. Next, dip it into the beaten eggs, allowing the excess to drip off. Finally, coat it in the grated Parmesan cheese, pressing gently to ensure the cheese sticks.
