2 medium zucchinis

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

2 large eggs

1 cup all-purpose flour

    Prepare the Zucchini: Wash and dry the zucchinis. Cut off the ends, and slice them into fry-shaped sticks, about 1/4 inch thick. If desired, you can soak the zucchini sticks in salted water for about 10 minutes to draw out moisture, then pat them dry with paper towels.

      Set Up Your Breading Station: In three separate shallow bowls, place flour in the first bowl, beaten eggs in the second, and mix breadcrumbs, Parmesan cheese, garlic powder, onion powder, oregano, salt, and pepper in the third bowl.
