4 medium ripe peaches, sliced

1 cup all-purpose flour

1 cup cornmeal

1 tsp baking powder

1 tsp salt

1 tsp chili powder (optional, for a hint of spice)

1 cup buttermilk (or regular milk)

1 large egg

4 small corn tortillas

Vegetable oil, for frying

1 cup fresh arugula or spinach

½ cup crumbled feta or goat cheese

¼ cup fresh mint, chopped

Prepare the Peaches: In a medium bowl, gently toss the sliced peaches with a pinch of salt and set aside for about 10 minutes. This will help extract some of the juices.

    Make the Batter: In a large bowl, whisk together the flour, cornmeal, baking powder, salt, and chili powder (if using). In a separate bowl, beat the buttermilk and egg until well combined. Pour the wet ingredients into the dry ingredients and mix until smooth.
