2 lbs chicken wings, split and tip removed

1 cup all-purpose flour

1/2 cup cornstarch

1 tsp baking powder

1/2 tsp salt

1/2 tsp black pepper

1/2 tsp garlic powder

1/2 tsp onion powder

Oil for frying (vegetable or peanut oil)

For the Sweet Chili Sauce:

1/2 cup sweet chili sauce

2 tbsp soy sauce

1 tbsp honey

1 tsp rice vinegar

1 clove garlic, minced

1 tsp sesame oil

1/2 tsp crushed red pepper flakes (optional, for extra heat)

Instructions
 

Prepare the Chicken Wings: In a large mixing bowl, combine the flour, cornstarch, baking powder, salt, black pepper, garlic powder, and onion powder. Mix well to create a dry coating mix. Pat the chicken wings dry with paper towels and then toss them in the coating mix, ensuring they’re well coated. Allow them to sit for about 15 minutes to let the coating adhere.

    Make the Sweet Chili Sauce: In a small saucepan, combine the sweet chili sauce, soy sauce, honey, rice vinegar, minced garlic, sesame oil, and optional crushed red pepper flakes. Bring to a gentle simmer over medium heat, stirring occasionally. Let it simmer for about 5 minutes until slightly thickened, then remove from heat and set aside.

      Heat the Oil: In a large, deep pan or Dutch oven, heat about 2 inches of oil over medium-high heat. To test if the oil is ready, drop a small amount of the coating mix into the oil; if it sizzles immediately, you’re good to go.
