Crockpot Chicken Corn Chowder

2 boneless, skinless chicken breasts

4 cups frozen corn (you can also use fresh corn if in season)

1 large onion, diced

2 medium potatoes, peeled and diced

3 cloves garlic, minced

4 cups low-sodium chicken broth

1 cup whole milk (or heavy cream for a richer chowder)

1 teaspoon dried thyme

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

½ cup chopped fresh parsley (for garnish)

Optional: 1 cup shredded cheese (cheddar or Monterrey Jack)

Optional: Crumbled bacon for topping

Prep the Chicken: Place the boneless, skinless chicken breasts at the bottom of the crockpot.

    Add the Veggies: Layer the frozen corn, diced onion, and diced potatoes on top of the chicken. Sprinkle minced garlic evenly over the top.

      Pour the Broth: Gently pour the chicken broth over the vegetables and chicken, ensuring everything is submerged.

        Season it Up: Sprinkle dried thyme, smoked paprika, salt, and black pepper over the mixture. Stir gently to combine—try not to disturb the chicken too much.

          Cook: Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through and easily shred with a fork.
