Crockpot Chili Chicken Sliders

2 lbs boneless, skinless chicken breasts

1 cup chili sauce (sweet or spicy, based on preference)

1/2 cup diced onions

1/2 cup diced red bell pepper

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

2 tbsp brown sugar

2 tbsp apple cider vinegar

1 tsp garlic powder

1 tsp cumin

1 tsp smoked paprika

1/2 tsp salt

1/2 tsp black pepper

Slider buns for serving

Optional toppings: sliced jalapeƱos, shredded cheese, avocado, cilantro

Instructions
 

Prepare the Chicken: Place the chicken breasts in the bottom of the crockpot.

    Mix the Sauce: In a bowl, combine the chili sauce, brown sugar, apple cider vinegar, garlic powder, cumin, smoked paprika, salt, and black pepper. Stir well to combine.

      Add Vegetables: Add the diced onions, red bell pepper, black beans, and corn to the crockpot over the chicken.

        Pour the Sauce: Pour the sauce mixture evenly over the chicken and vegetables, ensuring everything is well coated.

          Cook: Cover the crockpot with the lid and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and easily shreds.
