Ingredients

4 boneless, skinless chicken breasts

1 can (14.5 oz) crushed tomatoes

1 cup tomato sauce

1 cup heavy cream

1 medium onion, diced

4 cloves garlic, minced

1 cup chicken broth

1 tablespoon Italian seasoning

1 teaspoon red pepper flakes (optional, for heat)

1 teaspoon sugar (to balance acidity)

Salt and pepper, to taste

½ cup fresh basil leaves, chopped

1 tablespoon olive oil

Grated Parmesan cheese, for serving

Cooked pasta or rice, for serving

Instructions

Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. This enhances the flavor of the chicken as it cooks.

Sauté Aromatics: In a skillet over medium heat, add olive oil. Once hot, add diced onion and sauté until translucent (about 5 minutes). Then add minced garlic and cook for an additional minute until fragrant.

Combine Ingredients in the Crockpot: In the crockpot, combine the sautéed onions and garlic, crushed tomatoes, tomato sauce, heavy cream, chicken broth, Italian seasoning, red pepper flakes (if using), and sugar. Stir well to blend the flavors.

Add Chicken: Nestle the seasoned chicken breasts into the sauce mixture, ensuring they are partially submerged to absorb all the flavors.

Cook: Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.

Shred the Chicken: Once cooked, carefully remove the chicken breasts and shred them using two forks. Return the shredded chicken to the crockpot and stir to combine with the creamy tomato sauce.

Add Fresh Basil: Stir in the chopped fresh basil just before serving to maintain its vibrant color and flavor.

Serve: Ladle the creamy tomato basil chicken over prepared pasta or rice. Sprinkle with grated Parmesan cheese and additional fresh basil as desired.
