Ingredients

1 lb ground turkey

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) diced tomatoes (with juices)

1 can (8 oz) tomato sauce

1 cup frozen corn

1 cup chicken broth

1 tablespoon chili powder

1 teaspoon cumin

1/2 teaspoon smoked paprika

1/2 teaspoon oregano

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper

1/2 cup cream cheese (softened)

Optional toppings: shredded cheese, sour cream, green onions, cilantro

Instructions

Prep the Ingredients: Start by heating a skillet over medium heat. Add the ground turkey, diced onion, and minced garlic. Cook until the turkey is browned and the onion is translucent, about 5-7 minutes. Drain any excess fat.

Combine in the Crockpot: Transfer the cooked turkey mixture to the crockpot. Add the black beans, kidney beans, diced tomatoes, tomato sauce, corn, and chicken broth. Stir in the chili powder, cumin, smoked paprika, oregano, salt, and black pepper until well combined.

Cook Low and Slow: Cover the crockpot and set it to cook on low for 6-8 hours or on high for 3-4 hours. This allows the flavors to meld beautifully.

Creamy Finish: About 30 minutes before serving, add the softened cream cheese to the chili. Stir until completely incorporated. If you prefer a creamier texture, you can use a whisk or an immersion blender to blend it until smooth.

Serve: Once the chili is ready, serve hot in bowls and garnish with shredded cheese, a dollop of sour cream, chopped green onions, or fresh cilantro if desired.

Enjoy: Gather around the table and enjoy your creamy turkey chili with some crusty bread or over rice for a hearty meal!
