Ingredients

4 large yellow onions, thinly sliced

4 cloves garlic, minced

4 cups beef broth (low-sodium for better control of salt)

1 cup dry white wine (or dry sherry)

2 tablespoons olive oil

2 tablespoons unsalted butter

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

2 bay leaves

Salt and pepper to taste

1 baguette, sliced into 1-inch thick pieces

2 cups Gruyère cheese, shredded

1 cup Parmesan cheese, grated

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Onions: Heat the olive oil and butter in a skillet over medium heat. Add the sliced onions and sauté for about 10-15 minutes until they are soft and caramelized, stirring frequently to prevent sticking.

Add Garlic and Seasonings: Incorporate the minced garlic, thyme, bay leaves, and a pinch of salt and pepper to the onions. Cook for an additional 2 minutes until fragrant.

Transfer to Crockpot: Transfer the caramelized onion mix to your slow cooker. Pour in the beef broth and white wine, stirring lightly to combine.

Cook in Crockpot: Cover and cook on low for 6-8 hours or high for 3-4 hours, until the flavors meld beautifully.

Prepare Bread: About 30 minutes before serving, preheat your oven to broil. Place the sliced baguette on a baking sheet, and toast in the oven until golden brown.

Assemble Soup Bowls: Remove the bay leaves from the soup. Ladle the hot soup into oven-safe bowls, top each bowl with toasted baguette slices.

Garnish with Cheese: Generously sprinkle the Gruyère and Parmesan cheese on top of the soup and bread.

Broil for a Finish: Place the bowls under the broiler for 2-5 minutes, watching closely until the cheese is melted and bubbly.

Serve: Sprinkle with fresh parsley before serving hot. Enjoy your delicious and comforting French onion soup!
