Ingredients

2 pounds baby carrots (or regular carrots, peeled and sliced)

1/4 cup pure maple syrup

1/4 cup brown sugar, packed

3 tablespoons unsalted butter, melted

1 teaspoon cinnamon

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1/4 cup chopped pecans (optional for garnish)

Instructions

Prep the Carrots: If using regular carrots, peel and cut them into even-sized sticks or rounds. If using baby carrots, simply rinse them well.

Make the Glaze: In a medium bowl, whisk together the maple syrup, brown sugar, melted butter, cinnamon, salt, black pepper, and thyme until well combined.

Combine in the Crockpot: Place the carrots in the crockpot. Pour the glaze over the carrots, ensuring they're evenly coated. Stir gently to combine.

Cook: Cover the crockpot and cook on low for 4-5 hours, or on high for 2-3 hours, until the carrots are tender and infused with the glaze.

Finishing Touch: Once the cooking time is up, give the carrots a gentle stir. If desired, sprinkle with chopped pecans for added crunch and flavor.

Serve: Transfer the glazed carrots to a serving dish, drizzle some extra glaze over the top, and garnish with fresh thyme leaves if desired. Serve warm as a delicious side dish.
