Crockpot Ranch Chicken Tater Tot Casserole

1.5 lbs boneless, skinless chicken breasts

1 packet (1 oz) ranch seasoning mix

1 can (10.5 oz) cream of chicken soup

1 cup chicken broth

1 cup frozen mixed vegetables (peas, carrots, corn)

2 cups shredded cheddar cheese

1 bag (32 oz) frozen tater tots

1/2 cup sour cream

Salt and pepper to taste

Chopped green onions for garnish (optional)

Instructions
 

Prepare the Chicken: Place the boneless, skinless chicken breasts in the bottom of the crockpot. Season with salt, pepper, and the ranch seasoning mix, ensuring the chicken is well-coated.

    Mix the Sauce: In a mixing bowl, combine the cream of chicken soup and chicken broth. Stir until smooth, then pour the mixture over the seasoned chicken in the crockpot.

      Add Vegetables: Add the frozen mixed vegetables on top of the chicken and sauce mixture, spreading them evenly.

        Cook the Chicken: Cover the crockpot with the lid and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and easily shred with a fork.
