Crockpot Sweet Chili Turkey Bowls

1 lb ground turkey

1 bell pepper, diced (red, yellow, or green)

1 small onion, diced

2 cloves garlic, minced

1 cup canned diced tomatoes (with juices)

1 cup canned black beans, drained and rinsed

1/2 cup corn (frozen or canned)

1/4 cup low-sodium soy sauce

1/4 cup honey or maple syrup

1/4 cup sweet chili sauce

1 tsp ground cumin

1 tsp smoked paprika

1/2 tsp red pepper flakes (optional, for extra heat)

Salt and pepper to taste

2 cups cooked rice (white or brown)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Base: In a skillet over medium heat, cook the ground turkey until browned, breaking it apart as it cooks (about 5-7 minutes). Drain excess fat if necessary.

    Combine Ingredients: In your crockpot, add the cooked turkey, bell pepper, onion, and garlic. Stir in the diced tomatoes, black beans, corn, soy sauce, honey, sweet chili sauce, cumin, smoked paprika, and red pepper flakes. Season with salt and pepper to taste.

      Cook Slowly: Cover and cook on low for 6-8 hours or on high for 3-4 hours until the vegetables are tender and flavors meld together beautifully.

        Prepare Rice: If not pre-cooked, prepare rice according to package instructions while the turkey mixture is cooking.

          Assemble Bowls: Once cooked, give the turkey mixture a good stir. Serve the sweet chili turkey mixture over a bed of rice in bowls.

            Garnish & Serve: Top with fresh cilantro and serve with lime wedges on the side. Squeeze lime juice over each bowl before enjoying!
