8 slices of fresh sourdough bread

4 oz (115g) Gruyère cheese, grated

4 oz (115g) Emmental cheese, grated

4 oz (115g) thickly sliced ham (preferably Black Forest or smoked)

4 tablespoons unsalted butter, softened

2 tablespoons all-purpose flour

1 cup whole milk

1 teaspoon Dijon mustard

1 teaspoon Worcestershire sauce

Salt and freshly ground black pepper to taste

A pinch of nutmeg

Extra Gruyère cheese for topping (optional)

Fresh parsley, chopped (for garnish)

Prepare the Mornay Sauce: In a medium saucepan over medium heat, melt 2 tablespoons of butter. Add the flour and whisk continuously for about 2 minutes until it turns a light golden color. Slowly whisk in the milk, stirring to prevent lumps. Cook for about 5-7 minutes until the sauce thickens. Stir in Dijon mustard, Worcestershire sauce, nutmeg, salt, and pepper. Remove from heat and mix in the Gruyère and Emmental cheeses until melted and smooth.

    Assemble the Sandwiches: Preheat your oven to 400°F (200°C). Spread a thin layer of softened butter on one side of each slice of sourdough. On the unbuttered side, spread a tablespoon of the Mornay sauce. Place a slice of ham on 4 slices and top with another tablespoon of sauce. Add a sprinkle of the remaining cheese before closing the sandwiches with the other slices, buttered side facing out.

      Cook the Sandwiches: In a large skillet over medium heat, add the sandwiches and cook for about 3-4 minutes on each side until golden brown and crispy. If you want extra cheesy goodness, sprinkle additional Gruyère on top after flipping the sandwiches over.

        Bake for Extra Crispiness: Transfer the sandwiches to a baking sheet and bake in the preheated oven for an additional 5-7 minutes, or until heated through and the cheese is bubbling on top.
